Lemon Simple Syrup

Lemon Simple Syrup

Lemon Simple Syrup is made with lemon zest that adds a ton of sweet lemon flavor to desserts and drinks.  It only requires 3 ingredients, is incredibly easy to make, and essentially tastes like melted lemon drops.  Make a large batch and keep it in the fridge because it stores for a long time.

Lemon Simple Syrup Ingredients

Ingredients for Lemon Simple Syrup

  • 1 cup (235mL) water
  • 1 cup (200g) granulated sugar
  • 2 Tbsp (15g) lemon zest (approximately 3 large lemons)

Making Lemon Simple Syrup

Put water, sugar, and lemon zest in a small saucepan.  Stir with a spatula to moisten the sugar.  Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves.  Remove the saucepan from the heat and allow to cool to room temperature.  While the syrup is cooling, the lemon zest will flavor and color the syrup. 

Storing Lemon Simple Syrup

Pour the simple syrup through a strainer to remove the lemon zest.  Store in an airtight container up to four months in the fridge.

This syrup is great to add to popsicles (like my Mint Lemonade Popsicles), drinks, a soaking syrup on cake, or to drizzle over pancakes.

  • Digital scale (or liquid measuring cup, dry measuring cup, and measuring spoons)
  • Small saucepan
  • Silicone spatula
  • Microplane zester
