Use lemon squeezer to juice the lemons. Make sure you use fresh lemon juice and not bottled lemon juice for this. It makes a huge difference for the flavor.
Place the lemon juice, lemon simple syrup, and mint leaves in the blender. Mix on high until all ingredients are blended.
Pour the mint lemonade mixture through a strainer to remove the majority of the mint pieces. This will keep the popsicle looking one uniform color. Because the mint leaves are light, they tend to float to the top and will leave a layer of mint instead of staying incorporated in the mixture.
Filling the Popsicle Molds
Most popsicle molds have a max fill line that allows the mixture to expand while freezing without overflowing. Follow your mold’s instructions for how much mixture to add.
Insert the sticks and freeze the popsicles until solid (approximately 4-5 hours).
Leftover Mixture That Doesn’t Fit in Popsicle Molds?
If you have leftover Mint Lemonade Popsicle mixture, you can do one of the following:
Blend it with some ice and make a frozen mint lemonade drink.
Pour it into additional popsicle or ice cube trays. If you want to eat it as a popsicle, add a stick or toothpick for the ice cube tray. You could also use them as normal ice cubes in water.
Place the mixture into the fridge, allow the popsicles you already made to freeze, remove the popsicles from the molds, place them in resealable bags, and then reuse the popsicle molds for the remaining mixture.
Unmolding Mint Lemonade Popsicles
To easily unmold popsicles, dip the mold into warm water or hold the mold under warm running water for about 10 seconds. The popsicles will come out easily without any forceful pulling. This is the best way to avoid pulling out the popsicle stick from your frozen treat.

If your molds are a different size, you can simply make more or less of the recipe in the same proportion.
